Zesty Corn and Quinoa Salad

I'm so happy that Spring has officially bloomed here in Atlanta! It just puts everyone in a great mood with gorgeous flowers, sunshine and deep blue skies. Speaking of a great mood, spending time outdoors always puts a huge smile on my face and enjoying it with friends and family is what it's all about.
The other day I was out shopping with at my local Kroger when I saw Sunshine Sweet Corn From Florida on sale. I knew I wanted to make something simple, delicious and to be enjoyed by not just my family but friends that would be coming over as well. Sunshine Sweet Corn From Florida is such an easy addition to any spring meal with no-GMO's, extra tender kernels and guaranteed sweet taste in every bite.  One of my favorite things to make when the weather gets warm are simple side dishes, especially flavorful ones! This Zesty Corn and Quinoa Salad is sure to be a hit at your next dinner feast, party or just to enjoy at the park with your kids. Here's what you'll need!


Ingredients

  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 can black beans – drained & rinsed
  • 1 1/2 cups tomatoes – chopped
  • 5 green onions – chopped
  • 1 1/2 cups fresh sweet corn
  • 1 clove garlic – minced
  • 1/4 cup chopped fresh cilantro
  • 1/2 fresh lime – juiced
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 2 teaspoons cumin
  • 2 tablespoons red wine vinegar
  • salt and pepper to taste

Instructions

1. Bring quinoa and chicken broth to a boil
2. Reduce heat to low, cover and simmer until water has absorbed and quinoa is soft – let cool
3. In small bowl mix olive oil, red wine vinegar, lime juice, cilantro, red pepper flakes and cumin
4. In a large bowl, combine remaining ingredients and mix together
5. Toss with the dressing mixture and salt and pepper to taste
6. Cover and chill
7. Serve with tortilla chip or crackers
